Baked Turkey Meatballs

Writer: Nolan T GapskeNolan T Gapske

This recipe might become one of your favorites for make-ahead/meal prep lunches!

These meatballs are made this week’s food of the week. Plus they’re baked … which means not only do they come together quickly, but they don’t require you to stand over the stove to cook them.

PLUS … they taste AMAZING! Pair them with a veggie and rice for a full meal.

Baked Turkey Meatballs

(makes 12 meatballs/4 servings)

  • Nonstick cooking spray

  • 1 lb (450 grams) lean ground turkey

  • ⅓ cup (40 grams) gluten-free panko breadcrumbs

  • 1 egg

  • 1½ Tbsp coconut aminos

  • 1 tsp Italian seasoning

  • ½ tsp onion powder

  • ¼ tsp sea salt

  • 1 Tbsp extra-virgin olive oil

Preheat your oven to 400ºF/200ºC and line a rimmed baking sheet with foil. Spray the foil with nonstick cooking spray.

In a medium mixing bowl, place all the ingredients. Mix them gently until just combined.

Roll the mixture into 12 x 2” (5 cm) balls. Place the meatballs on the foil and bake until browned, about 15-20 minutes. If you are using a thermometer, the internal temp should read 165 degrees.

Enjoy!
